Pochas are a variety of white beans grown in northern Spain and harvested before maturity, at the point where the natural sugars of the product have being transformed into starch, and therefore considered a vegetable. Its flavor is soft and creamy. They are rich in protein, fiber and minerals (mainly potassium, calcium, magnesium and phosphorus). On the other hand, the quail is a small and corpulent bird that migrates from the African lands to Spain in spring. It can be found in the wild or in captivity. Its meat is delicate, fine, soft, tender and very appreciated in different cultures. A rich combination in proteins, vitamins A, B3, B6, B9, C and K.
